Becks Farms Super Sweet Carrot Cake

Ingredients:

• 1 cup vegetable oil
• 1 1/2 cup brown sugar
• 4 eggs
• 2 tsp vanilla
• 1 cup white flour
• 1 cup whole wheat flour
• 1 1/2 tsp baking powder
• 1 1/2 tsp baking soda
• 2 tsp cinnamon
• 1 tsp nutmeg
• 1/2 tsp allspice
• 1 tsp salt
• 3 1/2 cups grated Becks carrots
• 1 cup raisins, chopped
• 1 cup walnuts or pecans

Directions:

1. Preheat oven to 325F.
2. Combine oil and brown sugar in large bowl. Add eggs, one at a time, beating after adding each egg.
3. Add dry ingredients and mix well.
4. Add carrots then fold in nuts and raisins.
5. Pour mixture into 9×13 pan.
6. Bake at 325F for 55 minutes or until a toothpick inserted into the centre comes out clean.
